These squares are great warm from the oven, but any leftovers aren't bad cold for lunch the next day. I sometimes add chopped onion or a can of sliced mushrooms.
1/4 c. butter, melted
1 c. flour
1 c. milk
3 eggs
1 lb. shredded cheddar cheese
2 10-oz. pkg. frozen chopped spinach, thawed and drained
1 tsp. salt
1 tsp. baking soda
Preheat oven to 350.
Mix all ingredients together and spread in a greased 13"x9" pan.
Bake 30 min., or until center is set. Let cool a few minutes before cutting into squares.

I am a big fan of spinach! I'll have to post my very easy Chicken Florentine. Maybe we can start a spinach theme!
ReplyDeleteWhen I grocery shop in the summer, I frequently buy a box of frozen spinach or squash to act as an ice pack to keep the milk etc. cold in my insulated shopping bag on the way home. I'd love some more good spinach recipes!
